With the industrialization of flour production, the need for extended shelf life, the loss of nutrients due to the grinding process modern flour has had synthedic additives, vitamins, bleaching and other "enhancements" added back into the flour. The additives along with the chemicals used in the fields for bug and week control, modified seeds and other changes made to the flour process there has been a significant rise in wheat intolerance.
Beginning of the 1900's there were estimated to be 25,000 local mills, but today there is estimated to be less than 200 commercial stone mills in operation. Industrial steel high production milling produces over 90% of all US flour.
In researching stone mills, Europe is the leading producers of stone mills. We looked at two companies in our research, Osttiroler Getreidemuhlen from Austria ( OSTTIROLER commercial mills – 77 years - FOUNDER Green-Family - commercial stone flour mill, stone burr grain mill, corn mill - east tyrolean ) and The Miller Company from Ukraine ( Stone Mill - Grain Mills - Grain Grinding Mill - "The Miller" ) . After numerous discussion and research, we chose to impart a mill from Austria.
Our mill runs at 200-400 rpm to keep temperature of the milled flour cooler.
Output depends on the fineness of the milling but can produce 100# to 200# of flour per hour.
Sifting is capable to match the same output as the stone grinding output
